Pulled Pork

1.5kg shoulder pork (trim all fat off can use for crackling)
5 fresh cloves garlic chopped (can use purée )
2 table spoons smoked paprika
I tea spoon cumin
(Optional) 3 tablespoons - tubby toms bone sucker
1/2 teaspoon salt
1 tea spoon pepper
2 table spoons apple cider vinegar
150 ml chicken stock
(Optional)Add chilli flakes or your favourite hot sauce to taste
Small amount of BBQ sauce of your liking I’ve used a dark beer BBQ sauce on this one
2 tps cornflour
2 generous tbs honey
1 tbs brown sugar
Cook time
Home cook 4-5 hours slow cooker on high
Open fire Dutch oven Cook with coals slowly until thickest part reaches 170 degrees (we do ours for 3 hours
Grab your Pork shoulder then cut off the skin cut as close to the skin as possible so you can make crackling later on and you dont want too much fat when making crackling in my opinion but a little bit is fine, then trim the rest of the fat off the shoulder. Get a bowl combine all seasoning and the apple cider vinegar then rub that into your meat, then place in slow cooker/dutch oven and add the stock ( I normally add the amount in recipe but I make a little extra just in case it evaporates whilst cooking you want to keep the meat sitting in a bit of liquid to stop it drying out this will also make the sauce later on so dont let it burn or go dry!) Add garlic and the BBQ sauce (save some for sauce at the end)
Cook till ready to shred (you should be able to push a spoon into the pork and for it to fall apart when ready.) Remove pork to board let rest for 10 min then begin to pull I use the bear claws as in the picture but you cans use forks to do this I just like the look of them. Whilst waiting for pork to rest apply heat to the left over liquid remove a small amount and combine it with the corn flour then return to the mix add some more bbq sauce and now this should start to thicken up (if you were low on liquid add a little more stock mix depending how saucy you want it, on the flip side if you have too much liquid you could discard some or add more corn flour to thicken) add the sugar and honey when this has reached a nice sticky paste add the pulled pork and simmer for a further 10 min or so with out burning your sauce (honey & sugar love to burn) and done dig in and enjoy with which ever sides you like be that our dirty fries or …….
